Mmmmm chocolate my favorite sweet. I
happen to love the rich bittersweet taste
of dark chocolate, seems like I'm in luck.
There has been a lot of buzz lately about the
health benefits of chocolate. It seems that recent
studies have shown that chocolate may reduce
blood pressure and the risk of heart disease,
as well as improving the body's ability to
metabolize sugar. This can help to reduce risks for
diabetes and obesity. There is also the Italian
study that indicated women who ate chocolate
regularly were more amorous. Who Knew!!!!
Chocolates health benefits come from
antioxidants found in cocoa, primarily
flavanols, which are also found in fruits and
vegetables. This means that the higher the cocoa
content the better it is for you. Dark chocolate
rules here. (sorry all you white and milk
chocolate fans!) Before jumping off the deep
end, it is wise to keep in mind the fat and sugar
content in many chocolate concoctions can
quickly add unwanted calories. My top pick is
Lindt 70% cocoa extra fine squares, each 1 inch
square has a mere 30 calories. They come pre
-wrapped in individual squares making portion
control easier. It's a great taste I can easily fit
into my day. (I'm betting my husband will be
glad too!) So while the rest of the world is
swearing off sweets, a bit of indulgence is
actually good for you. That'sthe best news I've
had recently.

I hope your holidays were wonderful. Mine were busy but it felt good to get together with family and friends. I got a

The recipe this month is not only delicious, low
cal, and healthy but the Carribean flair could
inspire a summer menu in the middle of winter.

Carribean Orange Roughy

1 cup chicken broth
8 green onions, sliced on diagonal
1/2 red bell pepper, sliced into thin strips
1/2 yellow bell pepper, sliced into thin strips
4 slices lime
1 tablespoon fresh cilantro, minced
1/4 teaspoon curry powder
4 (4-ounce) orange roughy fillets

In a large skillet, combine first 7 ingredients.
Cover and bring to a boil.
Carefully add orange roughy.
Reduce heat to medium-low; cover and gently simmer
5 to 6 minutes, or until orange roughy is opaque and
flakes easily when tested with a fork.

Top evenly with the pepper-and-onion sauce and serve.

Makes 4 servings.
